I started a youth school with a brilliant coach ~30k wage and 3 assists with formidable (~10-12k wage). Is this sufficient to have alright trainees or would you suggest I invest more heavily. Right now I have ~12 trainees

I don't think assistant coaches matter for juniors. only the general appraisal (brilliant coach is pretty good).
The assistant coaches help by improving training effectiveness of your main team's players.
